  • 2 small tomatoes, diced
  • 1 (6 oz) can tomato paste
  • 1 garlic clove, minced
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp dried thyme
  • ¼ cup water
  • ⅛ tsp black pepper

For the Cheese Layer:

  • 1 egg, lightly beaten
  • ¾ cup low-fat cottage cheese (or ricotta)
  • ½ cup shredded mozzarella cheese (divided)
  • 1 tsp flour

Directions

  1. Prep Zucchini:
    • Cook zucchini slices until tender (steam, boil, or sauté). Drain and set aside.
  2. Make Meat Sauce:

      2. Half the zucchini

      4. Remaining meat sauce
      5. Remaining zucchini
