Ingredients

(Units: US Measurements)

Base Ingredients:

  • 4 teaspoons bread machine yeast
  • ½ teaspoon sugar
  • 1¼ cups water (90–100°F)
  • 3 tablespoons olive oil
  • ¾ teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon Splenda sugar substitute

Flour Blend:

  • 1 cup vital wheat gluten flour
  • ¼ cup oat flour
  • ¾ cup soy flour
  • ¼ cup flax seeds
  • ¼ cup wheat bran

Optional Add-Ins (Choose Your Variations):

  • Seeds: 2 tbsp sunflower seeds, 2 tbsp flax seeds, 2 tbsp sesame seeds
  • Rye Variation:
    • 2 tbsp caraway seeds
    • 1 tsp instant coffee
    • 1 tsp cocoa powder
    • ½ cup dark rye flour

Directions

  1. Prepare Wet Ingredients:
    • Add the water, olive oil, and sugar to the bread machine pan.
  2. Mix Dry Ingredients:
    • In a separate bowl, combine all dry ingredients (flours, seeds, salt, Splenda) except yeast and baking powder. Mix well.
    • Remove ¼ cup of the dry mixture and set aside.
    • Pour the remaining dry ingredients into the bread machine pan.
  3. Add Yeast & Baking Powder:
    • Mix the reserved ¼ cup dry ingredients with the yeast and baking powder.
    • Sprinkle this mixture evenly into the bread machine pan.
  4. Bake Cycle:
    • Select the 3-hour bake cycle on your machine.
    • After 55 minutes, gently lift the dough, remove the paddle, and return the dough to the machine. (This prevents a large hole in the loaf.)
      • For an 80-minute cycle, remove the paddle at 30 minutes.
  5. Cooling & Storage:
    • Let the bread cool completely.
    • Store in a ziploc bag in the refrigerator—it slices better when chilled.
  6. Serving Notes:
    • This bread has a slightly spongy texture (lighter than regular bread).
    • Excellent for toasting!
