Makes: 1 loaf

Ingredients

  • 3 ripe bananas, mashed (~1½ cups)
  • 1 cup Splenda (or granulated sugar substitute of choice)
  • ½ cup unsweetened natural applesauce
  • ¾ cup all-purpose flour
  • ½ cup whole wheat flour
  • ½ tsp salt
  • 1½ tsp baking soda

Instructions

  1. Prep: Preheat oven to 350°F (175°C). Lightly grease a standard 9×5-inch loaf pan or line with parchment paper. (For dark-coated pans, reduce temperature to 325°F (160°C) and extend baking time.)
  2. Mix Wet Ingredients: In a large bowl or mixer, mash bananas until smooth. Add Splenda and applesauce; mix until combined.
  3. Add Dry Ingredients: Gently stir in all-purpose flour, whole wheat flour, salt, and baking soda until just incorporated (avoid overmixing).
  4. Bake: Pour batter into the prepared pan. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  5. Cool: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes:

  • For added texture, fold in ½ cup chopped nuts or sugar-free chocolate chips.
  • Store in an airtight container for up to 3 days or freeze for longer freshness.
