Ingredients

Coconut Cream Layer:

  • 1 (14 oz) can full-fat coconut milk (chilled overnight)
  • 4 oz vegan cream cheese, softened
  • ⅓ cup granulated sugar

Coffee Cake:

  • 1⅔ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup + 2 tbsp vegetable oil
  • 1 cup strong brewed coffee, cooled
  • 1 tsp vanilla extract

Assembly:

  • 1 cup strong brewed coffee, cooled
  • ½ cup Marsala wine (or sub coffee + 1 tbsp maple syrup for alcohol-free)
  • Unsweetened cocoa powder, for dusting

Instructions

1. Prepare Coconut Cream:

  • The night before, chill the unopened coconut milk can horizontally in the fridge.
  • The next day, flip the can upside down, open the bottom, and drain the liquid (save for smoothies!). Scoop the solidified cream into a bowl.
  • Whip with a hand mixer until fluffy. Add vegan cream cheese and ⅓ cup sugar; whip until smooth. Chill until ready to use.

2. Bake the Coffee Cake:

  • Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
  • In a bowl, whisk flour, sugar, baking powder, and salt. Add oil, coffee, and vanilla; stir until just combined (don’t overmix).
  • Pour batter into the pan and bake for 25-30 minutes, until a skewer comes out clean. Cool completely, then tear into 2-inch chunks.

3. Assemble Parfaits:

  • In a shallow bowl, mix 1 cup coffee and Marsala wine.
  • For each serving glass:
    • Dip cake chunks briefly in the coffee mixture and layer in the bottom.
    • Add a spoonful of coconut cream.
    • Repeat layers, ending with cream.
  • Dust generously with cocoa powder. Chill for 1+ hours (or overnight) to soften.
