Hearty Beef & Vegetable Stew

Serves: 6 | Prep: 15 mins | Cook: 2 hours

Ingredients

  • 1¼ lbs beef stew meat, cubed
  • 1 tbsp olive oil (for browning)
  • 1 tbsp beef bouillon (or 1 cube)
  • 1 bay leaf
  • 8 cups water
  • 1½ cups carrots, chopped
  • 3 medium potatoes, 1-inch cubes
  • ½ onion, coarsely chopped
  • 14.5 oz can diced tomatoes, undrained
  • 14.5 oz can green beans, drained
  • 8 oz frozen corn
  • Salt & black pepper, to taste

Instructions

  1. Brown the Beef:
  • Heat oil in a large pot over medium-high heat. Brown beef cubes on all sides (~5 mins).
  1. Simmer the Base:
  • Add bouillon, bay leaf, and water. Bring to a boil, then reduce heat to low.
  • Cover and simmer for 1½ hours until beef is tender.
  1. Add Vegetables:
  • Stir in carrots, potatoes, onion, tomatoes, green beans, and corn.
  • Return to a boil, then reduce heat. Cover and simmer 30 mins until veggies are tender.
  1. Season & Serve:
  • Discard bay leaf. Season with salt and pepper to taste.
