  • 1 lb large shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp white wine (or chicken broth)
  • ½ lemon, juiced
  • ¼ tsp red pepper flakes (adjust to taste)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped

To Finish:

  • 2 tbsp Romano cheese, grated (+ extra for garnish)
  • Lemon wedges, for serving

  1. Prep “Linguine”:
  • Use a vegetable peeler to slice zucchini and squash into long, thin strips (stop when you reach seeds).
  • Heat 1 tbsp oil in a large skillet over medium-high. Sauté strips with half the garlic, salt, and pepper for 2 mins until just tender. Transfer to a bowl.
