Ingredients:
- 3 large ripe tomatoes
- 250g (8 oz) fresh mozzarella
- Fresh basil leaves
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic glaze (or reduction)
- Salt and freshly cracked black pepper, to taste
