Ingredients
For the Falafel:
- 2 cups dried chickpeas (soaked overnight)*
- 1 small onion, roughly chopped
- 4 garlic cloves
- 1 cup fresh parsley/cilantro mix
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp cayenne (optional)
- 1 tbsp lemon juice
- 1½ tsp salt
- 2 tbsp chickpea flour (or all-purpose)
- Oil for frying
For Serving:
- Pita bread
- Tahini sauce
- Pickled turnips/veggies
- Chopped tomatoes & cucumbers
Instructions
1️⃣ Prep Chickpeas:
- Drain soaked chickpeas (don’t cook them!). Pat dry.
2️⃣ Make Mixture:
- Pulse chickpeas, onion, garlic, herbs, and spices in a food processor until crumbly (not paste-like).
- Transfer to bowl. Add lemon juice, salt, and flour. Mix well. Chill for 30 minutes.
3️⃣ Shape & Fry:
- Form into 1½” balls or patties.
- Heat oil to 350°F (175°C). Fry in batches for 3-4 minutes until deep golden. Drain on paper towels.
4️⃣ Serve:
- Stuff in warmed pita with veggies and tahini sauce.
