Cheesy Taco-Stuffed Empanadas are golden pastry pockets filled with seasoned beef, melty cheese, and all the bold flavor of your favorite taco. Baked or air-fried until crisp and golden, these empanadas are perfect for dipping in salsa, guac, or sour cream — and totally addictive.

Ingredients (makes 8 empanadas):
- 1 package empanada dough discs (or use puff pastry or homemade dough)
- 300g (10 oz) ground beef
- 1 tsp taco seasoning
- ½ cup shredded cheddar or pepper jack cheese
- ¼ cup salsa or chopped tomatoes
- 1 egg (for egg wash)
- Optional: jalapeños, chopped cilantro, diced onion
Instructions:
- Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
- In a skillet, cook beef with taco seasoning. Once browned, stir in salsa and let cool slightly.
- Place a spoonful of filling and cheese in the center of each dough disc. Fold over and crimp the edges with a fork to seal.
- Brush with egg wash.
- Bake for 20–22 minutes or air fry for 10–12 minutes until golden and crisp.
- Serve warm with dips — and maybe a little lime squeeze on top!
