Ingredients

  • 6 medium avocados, halved and pitted
  • 6 oz smoked salmon, sliced into strips
  • 12 large eggs
  • Salt & black pepper, to taste
  • Red chili flakes, for garnish
  • Fresh dill, chopped, for garnish
  • Toast or crusty bread, for serving

Instructions

  1. Prep:
  • Preheat oven to 425°F (220°C).
  • Halve avocados and remove pits. Scoop out a bit of flesh if needed to fit the eggs.
  1. Fill & Bake:
  • Place avocado halves on a baking sheet. Line each cavity with smoked salmon.
