Ingredients

  • 1 lb chicken breast tenders
  • 2 garlic cloves, minced
  • 1½ cups instant brown rice
  • 1 (15.5 oz) can chicken broth
  • 1–2 cups mushrooms, thickly sliced
  • 1 tsp dried thyme
  • 1 tbsp lemon juice
  • 2 tsp lemon zest
  • Salt & pepper, to taste
  • 2 cups baby spinach, thinly sliced

Directions

1. Cook the Chicken

2. Simmer the Rice
