Ingredients

For the Cauliflower Steaks:

  • Kosher salt & black pepper

For the Relish:

  • ½ cup reserved cauliflower florets, finely chopped
  • ½ cup pitted Kalamata olives, chopped
  • 3 sun-dried tomatoes, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp flat-leaf parsley, chopped
  • 1 tsp lemon juice

For the Tomato-Garlic Purée:

  • 3 garlic cloves, peeled
  • 2 plum tomatoes, cored and quartered
  • ½ tbsp olive oil

Directions

1. Prep the Cauliflower
  1. Slice cauliflower into four ½-inch “steaks” from the center (reserve loose florets).
  2. Finely chop ½ cup florets for relish.
2. Make the Relish
  • In a bowl, mix chopped florets, olives, sun-dried tomatoes, 1 tbsp oil, parsley, lemon juice, salt, and pepper. Set aside.
3. Cook the Steaks
