Ingredients
For the Carne Asada:
- 1 lb flank or skirt steak
- ¼ cup orange juice
- 2 tbsp lime juice
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp oregano
- Salt & pepper
For the Al Pastor (Optional):
- 1 lb pork shoulder, thinly sliced
- 3 tbsp achiote paste
- ¼ cup pineapple juice
- 1 tbsp vinegar
- 1 tsp smoked paprika
For Serving:
- 12-16 corn tortillas
- 1 cup chopped white onion
- ½ cup fresh cilantro
- Lime wedges
- Salsa verde & roja
Instructions
1️⃣ Marinate Meats (2h-24h):
- For carne asada: Combine all marinade ingredients with steak.
- For al pastor: Blend achiote, pineapple juice, vinegar, and paprika. Coat pork.
2️⃣ Grill:
- Cook steak over high heat 3-4 mins per side for medium-rare. Rest, then slice thinly.
- Cook pork on a grill or skillet until charred (~2 mins per side).
3️⃣ Warm Tortillas:
- Heat tortillas on a dry skillet for 30 sec per side. Keep wrapped in a towel.
4️⃣ Assemble Tacos:
- Layer meat on tortillas. Top with onion, cilantro, and salsa. Squeeze lime over top.
