Ingredients (Serves 2-3):
For the Pasta:
- 8 oz (225g) spaghetti
- 1 tbsp salt (for pasta water)
For the Prawns:
- 12 oz (350g) large prawns, peeled & deveined
- 2 tbsp olive oil
- 4 garlic cloves, minced
- ½ tsp red pepper flakes (optional)
- ¼ cup dry white wine (or chicken stock)
- ½ cup heavy cream
- 1 tbsp lemon juice
- 2 tbsp chopped parsley
- ¼ cup grated Parmesan
- Salt & black pepper to taste
Instructions:
1️⃣ Cook Pasta:
- Boil spaghetti in salted water until al dente. Reserve ½ cup pasta water, then drain.
2️⃣ Sauté Prawns:
- Heat olive oil in a large skillet over medium-high heat.
- Add prawns, season with salt/pepper, and cook for 1-2 mins per side until pink. Remove and set aside.
3️⃣ Make the Sauce:
- In the same pan, sauté garlic and red pepper flakes for 30 seconds.
