Ingredients

For the Sandwich:

  • 2 slices whole grain/sourdough bread
  • ½ ripe avocado, mashed
  • ¼ tsp chili flakes
  • ½ cup firm tofu, crumbled
  • ¼ tsp turmeric (for color)
  • 1 tbsp nutritional yeast
  • Handful baby spinach
  • 1 tbsp olive oil

For the Cashew Spread:

  • 2 tbsp raw cashews (soaked 10 mins)
  • 1 tbsp lemon juice
  • 1 tsp maple syrup
  • 1 garlic clove
  • 2 tbsp water

Optional Extras:

  • Tomato slices
  • Microgreens
  • Everything bagel seasoning

Instructions

1️⃣ Make Cashew Spread:

  • Blend all spread ingredients until smooth.

2️⃣ Prepare Tofu Scramble:

  • Heat oil in a pan. Add crumbled tofu, turmeric, nutritional yeast, and salt. Sauté 3 mins.

3️⃣ Toast & Assemble:

  • Toast bread until golden.
  • Layer: Cashew spread → avocado (sprinkled with chili flakes) → tofu scramble → spinach.

4️⃣ Serve Immediately:
