Ingredients
For the Sandwich:
- 2 slices whole grain/sourdough bread
- ½ ripe avocado, mashed
- ¼ tsp chili flakes
- ½ cup firm tofu, crumbled
- ¼ tsp turmeric (for color)
- 1 tbsp nutritional yeast
- Handful baby spinach
- 1 tbsp olive oil
For the Cashew Spread:
- 2 tbsp raw cashews (soaked 10 mins)
- 1 tbsp lemon juice
- 1 tsp maple syrup
- 1 garlic clove
- 2 tbsp water
Optional Extras:
- Tomato slices
- Microgreens
- Everything bagel seasoning
Instructions
1️⃣ Make Cashew Spread:
- Blend all spread ingredients until smooth.
2️⃣ Prepare Tofu Scramble:
- Heat oil in a pan. Add crumbled tofu, turmeric, nutritional yeast, and salt. Sauté 3 mins.
3️⃣ Toast & Assemble:
- Toast bread until golden.
