Ingredients (Serves 1–2):

For the Noodles:

  • 1 pack instant ramen noodles (or 200g fresh udon/soba noodles)
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1–2 tsp chili paste (gochujang, sambal oelek, or sriracha)

Optional Add-ins:

  • 1 cup shredded cabbage or baby spinach
  • ½ carrot, julienned or grated
  • 2 green onions, sliced
  • 1 fried egg per serving
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil (optional)
  • Sesame seeds and cilantro for garnish

Instructions:

Step 1: Cook the Noodles

Boil water in a pot and cook the noodles according to package instructions until al dente. Drain and set aside.

If using instant ramen , boil the noodles in the seasoning packet with extra water, then drain and reserve a bit of cooking liquid.

Step 2: Stir-Fry Aromatics

In a skillet or wok over medium-high heat, add vegetable oil, minced garlic, and grated ginger. Sauté for 30 seconds until fragrant.

Add chili paste and mix well. Adjust spiciness based on your preference.

Step 3: Add Veggies

Toss in cabbage, carrots, and green onions. Stir-fry for 2–3 minutes until slightly softened but still crisp.

Step 4: Combine Everything

Add cooked noodles to the pan. Pour in soy sauce and sesame oil (if using). Toss everything together until evenly coated and heated through.

Add a splash of water or broth if it feels too dry.

Step 5: Top with Egg

Fry one or two eggs sunny-side up or over-easy. Place on top of the noodles for added richness.

Step 6: Serve Hot

Transfer to a bowl, sprinkle with sesame seeds and chopped cilantro, and enjoy immediately.

For extra heat, drizzle with more chili paste or add sliced jalapeños.

Pro Tips:

  • Use egg noodles or rice noodles for variety.
  • Add tofu cubes, chicken, or shrimp for extra protein.
  • Swap chili paste for black bean sauce or tomato-based curry for different flavor profiles.
  • Make it vegetarian by skipping egg or using a tofu scramble instead.
