Spicy Korean Tteokbokki Noodles (Chewy Rice Cake Stir-Fry)

Craving bold Korean flavors? This Tteokbokki Noodles dish combines chewy rice cakes and ramen noodles in a fiery-sweet gochujang sauce with fish cakes and soft-boiled eggs. A street food classic ready in 20 minutes!

Ingredients

Main Components:

  • 1 lb Korean rice cakes (tteok) soaked if frozen
  • 2 packs instant ramen noodles (discard seasoning)
  • 4 cups water or anchovy broth

For the Sauce:

  • 3 tbsp gochujang (Korean chili paste)
  • 1 tbsp gochugaru (chili flakes)
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp corn syrup or honey
  • 2 garlic cloves, minced

Add-Ins:

  • 1 cup fish cakes, sliced
  • 2 boiled eggs
  • 1 cup cabbage, sliced
  • 2 green onions, chopped

Garnish:

  • Sesame seeds
  • Nori strips

Instructions

1️⃣ Prep Components:

  • Soak rice cakes in warm water for 10 mins if hardened.
  • Boil ramen noodles for 2 mins, drain, and rinse.

2️⃣ Make the Sauce:

  • Mix gochujang, gochugaru, soy sauce, sugar, corn syrup, and garlic in a bowl.

3️⃣ Cook Together:

  • In a pan, bring broth to a boil. Add sauce and stir.
  • Add rice cakes, fish cakes, and cabbage. Simmer for 5 mins.
  • Toss in noodles and eggs. Cook 2 more mins until thickened.

4️⃣ Serve Hot:

  • Garnish with green onions, sesame seeds, and nori.
