Crispy on the outside, pillowy-soft inside, this Garlic Bruschetta Loaf is loaded with fresh tomato-basil topping and melted mozzarella. Perfect as an appetizer, party snack, or side dish for pasta night!

Ingredients
For the Bread:
- 1 large baguette (or ciabatta loaf)
- ¼ cup olive oil
- 3 garlic cloves, minced
- 2 tbsp butter, softened
- ½ tsp salt
For the Bruschetta Topping:
- 2 cups diced tomatoes (seeds removed)
- ¼ cup fresh basil, chopped
- 1 tbsp balsamic vinegar
- 1 tsp garlic, minced
- ½ tsp salt
- ¼ tsp black pepper
Optional Additions:
- 1 cup shredded mozzarella
- ¼ cup grated parmesan
- Red pepper flakes (for heat)
Instructions
1️⃣ Prep Bread:
- Preheat oven to 375°F (190°C).
- Cut bread diagonally into 1″ thick slices (don’t cut all the way through).
2️⃣ Make Garlic Oil:
- Mix olive oil, minced garlic, butter, and salt. Brush between slices and over top.
3️⃣ Bake First Round:
- Wrap loaf in foil, bake for 15 minutes. Unwrap, bake 5 more minutes until crisp.
4️⃣ Prepare Topping:
- Combine tomatoes, basil, balsamic, garlic, salt, and pepper.
5️⃣ Assemble & Melt:
- Stuff tomato mixture between slices. Top with cheeses.
- Broil for 2-3 minutes until cheese bubbles.
