Vegan Yakisoba Noodles (Japanese Stir-Fry)

Savor the bold flavors of Japan with this Vegan Yakisoba—a savory, umami-packed stir-fry with chewy noodles, crisp veggies, and a tangy-sweet sauce. Ready in 20 minutes, this dish is perfect for quick weeknight dinners or meal prep!

Ingredients

For the Noodles & Veggies:

  • 2 packs (about 14 oz) yakisoba noodles (or ramen noodles)
  • 2 tbsp vegetable oil
  • 1 small onion, sliced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 2 cups cabbage, shredded
  • 1 cup mushrooms (shiitake or button), sliced
  • 2 green onions, chopped

For the Sauce:

  • 3 tbsp soy sauce (or tamari for gluten-free)
  • 2 tbsp Worcestershire sauce (vegan)
  • 1 tbsp ketchup
  • 1 tbsp maple syrup (or sugar)
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • ½ tsp sesame oil

Optional Toppings:

  • Pickled ginger
  • Sesame seeds
  • Crushed nori (seaweed)

Instructions

1️⃣ Prep Noodles:

  • Cook noodles according to package instructions. Rinse under cold water, drain, and set aside.

2️⃣ Make the Sauce:

  • Whisk all sauce ingredients in a small bowl.

3️⃣ Stir-Fry Veggies:

  • Heat oil in a large wok or skillet over high heat.
  • Add onion, carrot, bell pepper, and mushrooms. Stir-fry for 3-4 minutes until slightly tender.
  • Add cabbage and cook for 2 more minutes.

4️⃣ Combine & Serve:

  • Add noodles and sauce to the pan. Toss everything together for 2-3 minutes until heated through.
  • Garnish with green onions, sesame seeds, and nori.
