Ingredients
For the Noodles & Veggies:
- 2 packs (about 14 oz) yakisoba noodles (or ramen noodles)
- 2 tbsp vegetable oil
- 1 small onion, sliced
- 1 carrot, julienned
- 1 bell pepper, sliced
- 2 cups cabbage, shredded
- 1 cup mushrooms (shiitake or button), sliced
- 2 green onions, chopped
For the Sauce:
- 3 tbsp soy sauce (or tamari for gluten-free)
- 2 tbsp Worcestershire sauce (vegan)
- 1 tbsp ketchup
- 1 tbsp maple syrup (or sugar)
- 1 tsp grated ginger
- 1 clove garlic, minced
- ½ tsp sesame oil
Optional Toppings:
- Pickled ginger
- Sesame seeds
- Crushed nori (seaweed)
Instructions
1️⃣ Prep Noodles:
- Cook noodles according to package instructions. Rinse under cold water, drain, and set aside.
2️⃣ Make the Sauce:
- Whisk all sauce ingredients in a small bowl.
3️⃣ Stir-Fry Veggies:
- Heat oil in a large wok or skillet over high heat.
- Add onion, carrot, bell pepper, and mushrooms. Stir-fry for 3-4 minutes until slightly tender.
- Add cabbage and cook for 2 more minutes.
