Ingredients:
For the Dough:
- 2 cups all-purpose flour
- ¼ tsp salt
- 4 tbsp ghee or vegetable oil
- 6-7 tbsp ice-cold water
For the Filling:
- 2 medium potatoes, boiled & mashed
- ½ cup green peas (fresh or frozen)
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 tsp grated ginger
- 1 green chili, finely chopped
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp amchur (dry mango powder)
- Salt to taste
- 2 tbsp chopped cilantro
For Frying:
- Vegetable oil (for deep frying)
Instructions:
1️⃣ Make the Dough:
- Mix flour and salt. Rub in ghee/oil until crumbly.
- Gradually add water to form a stiff dough. Knead for 2-3 minutes.
- Cover with a damp cloth and rest for 30 minutes.
2️⃣ Prepare the Filling:
- Heat oil in a pan. Add cumin seeds, let them splutter.
- Add ginger, green chili, and sauté for 30 seconds.
- Add peas, mashed potatoes, and all spices. Cook for 3-4 minutes.
- Stir in cilantro and let the filling cool completely.
3️⃣ Shape the Samosas:
- Divide dough into 6 equal balls. Roll each into a thin oval.
- Cut in half to form two semi-circles. Fold each into a cone shape.
- Fill with 1-2 tbsp potato mixture. Seal edges with water.
4️⃣ Fry to Perfection:
- Heat oil to 350°F (175°C) on medium heat.
- Fry samosas in batches until golden brown (4-5 minutes).
- Drain on paper towels.
