Ingredients (Makes 2β3 wraps):
- 2β3 certified gluten-free tortillas (corn, almond flour, or brown rice)
- 3 large eggs
- Β½ cup cooked chicken sausage or tofu crumbles
- ΒΌ cup shredded cheese (or dairy-free cheese)
- Β½ cup spinach or kale
- ΒΌ cup diced tomatoes or peppers
- Salt, pepper, and garlic powder to taste
- Olive oil spray (for crisping)
Instructions:
- In a skillet, cook the chicken sausage or tofu crumbles until heated through.
- Add spinach/kale and cook until wilted.
- Scramble the eggs in a separate pan and season with salt, pepper, and garlic powder.
