🥙 Mediterranean Breakfast Burrito Recipe
Ingredients (Makes 4–6 burritos):
- 6 large eggs
- ½ cup canned chickpeas (rinsed & smashed)
- ½ cup crumbled feta cheese
- ½ cup diced cucumber
- ½ cup cherry tomatoes, halved
- ¼ cup Kalamata olives, sliced
- 1 tbsp chopped parsley or mint
- 1 tsp olive oil
- Salt, pepper, and dried oregano to taste
- 4–6 whole wheat or low-carb tortillas
Instructions:
- In a bowl, whisk and scramble eggs until fluffy.
- In a skillet, heat olive oil and lightly sauté the smashed chickpeas with a pinch of oregano, salt, and pepper.
