Ingredients:
- 200g (7 oz) fettuccine or spaghetti
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 ½ cups heavy cream
- 1 cup grated Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- Chopped fresh parsley (for garnish)
- Optional: pinch of chili flakes for a spicy kick
Instructions:
- Bring a pot of salted water to a boil. Cook the pasta until al dente according to the package instructions. Reserve ½ cup of the pasta water before draining.
- In a large skillet over medium heat, melt the butter. Add the garlic and sauté for 1-2 minutes until fragrant (but not browned).
- Pour in the heavy cream and stir well. Let it simmer gently for about 4 minutes to thicken slightly.
- Reduce the heat and whisk in the Parmesan cheese until melted and smooth.
- Add salt and pepper to taste. If the sauce is too thick, stir in a splash of the reserved pasta water.
- Toss the cooked pasta in the sauce until evenly coated.
- Plate the pasta, garnish with chopped parsley and chili flakes if using.
- Serve warm and enjoy the creamy goodness!
