Classic Thai Sticky Rice with Mango

Ingredients:

For the Sticky Rice:

  • 1 cup glutinous (sticky) rice
  • 1 cup coconut milk
  • 3 tbsp sugar
  • ½ tsp salt

For Serving:

  • 2 ripe mangoes, sliced
  • 2 tbsp toasted sesame seeds or mung beans (optional)
  • Fresh mint leaves (for garnish)

For the Coconut Sauce (Optional):

  • ½ cup coconut milk
  • 1 tbsp sugar
  • Pinch of salt

Instructions:

1️⃣ Prepare the Rice:

  • Rinse sticky rice under cold water until water runs clear. Soak in water for 4 hours or overnight.
  • Drain and steam for 20-25 minutes until tender (use a bamboo steamer or colander over boiling water).

2️⃣ Make Coconut Rice:

  • In a saucepan, heat coconut milk, sugar, and salt until dissolved (do not boil).
  • Pour over cooked rice, mix gently, and let sit covered for 15 minutes to absorb flavors.

3️⃣ Prepare Mangoes:

  • Peel and slice mangoes into thin strips or cubes.

4️⃣ Optional Coconut Sauce:

  • Heat coconut milk, sugar, and salt until slightly thickened (3-4 minutes).

5️⃣ Serve:

  • Scoop warm rice onto a plate, arrange mango slices alongside.
  • Drizzle with extra coconut sauce and sprinkle with sesame seeds.
