🥙 Mediterranean Breakfast Burrito Recipe

Ingredients (Makes 4–6 burritos):

  • 6 large eggs
  • ½ cup canned chickpeas (rinsed & smashed)
  • ½ cup crumbled feta cheese
  • ½ cup diced cucumber
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, sliced
  • 1 tbsp chopped parsley or mint
  • 1 tsp olive oil
  • Salt, pepper, and dried oregano to taste
  • 4–6 whole wheat or low-carb tortillas

Instructions:

  1. In a bowl, whisk and scramble eggs until fluffy.
  2. In a skillet, heat olive oil and lightly sauté the smashed chickpeas with a pinch of oregano, salt, and pepper.
  3. Combine eggs, chickpeas, feta, cucumber, tomatoes, olives, and herbs in a large bowl.
  4. Scoop mixture into tortillas and roll into burritos.
