Do You Have 3 Potatoes and 1 Egg? This Village Grandmother Recipe Will Win Everyone Over!

This incredible dish made with just 3 potatoes and 1 egg is a true family favorite — crispy on the outside, soft and savory inside. Inspired by my village grandmother’s kitchen, it uses only a few simple ingredients that most of us already have at home. Whether you’re cooking for breakfast, lunch, or dinner, this hearty meal will impress everyone at the table.

✅ Ingredients:

  • 3 medium potatoes
  • 1 egg
  • Salt and black pepper (to taste)
  • Sweet paprika (optional)
  • Italian herbs mix (optional)
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1 carrot (grated)
  • Fresh parsley (chopped)
  • 100g ham (optional)
  • 4 tablespoons breadcrumbs
  • 70g cheese (grated mozzarella or any melting cheese)
  • Butter (for frying)
  • Vegetable oil

🥄 For the Creamy Garlic Sauce:

  • 3 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • Salt and black pepper (to taste)
  • 1–2 garlic cloves (minced)
  • Chopped dill
  • 1 vinegar cucumber (chopped, optional)

👨‍🍳 Instructions:

Step 1: Grate and Squeeze the Potatoes
Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel. Transfer to a large bowl.

Step 2: Add Flavorful Mix-ins
Add finely chopped onions, grated carrots, minced garlic, fresh parsley, salt, pepper, and herbs. Stir well to combine.

Step 3: Add Egg & Breadcrumbs
Crack in the egg and add breadcrumbs. Mix thoroughly until everything is evenly combined and slightly sticky.

Step 4: Optional – Add Ham & Cheese
For extra flavor, stir in small pieces of ham and a sprinkle of grated cheese.

Step 5: Shape into Patties
Using your hands or a spoon, shape the mixture into small to medium-sized patties.

Step 6: Fry Until Golden
Heat a mixture of butter and vegetable oil in a skillet. Fry the patties on medium heat for about 3–4 minutes per side until golden brown and crispy.

Step 7: Make the Creamy Garlic Sauce
While the patties cook, mix sour cream, mayonnaise, garlic, salt, pepper, dill, and chopped cucumber (if using). Chill until serving.

Step 8: Serve & Enjoy
Serve warm with a dollop of the creamy sauce on top or on the side. These potato cakes are also great with a side salad or pickles!
