This simple yet incredibly delicious dish proves that sometimes the best meals come from just a few ingredients. Inspired by my grandmother’s rustic cooking, this recipe involves pouring a savory egg mixture over crispy potatoes — and the result is pure magic!

✅ Ingredients:
- 4–5 medium potatoes
- 2 eggs
- Salt and black pepper (to taste)
- Sweet paprika (optional)
- 1 onion (finely chopped)
- 1 carrot (grated)
- 1 clove garlic (minced)
- Fresh parsley and dill (chopped)
- 2 tablespoons flour
- 1 chicken fillet (cooked and shredded)
- 8 mushrooms (sliced)
- 100 ml cream
- 100g mozzarella cheese
- Butter (for extra richness)
- Olive oil (for frying)
- 1–2 tomatoes (sliced)
- 2–3 olives (optional, for garnish)
👨🍳 Instructions:
Step 1: Cook the Potatoes
Peel and slice the potatoes into thin rounds. In a large skillet, heat olive oil and butter. Fry the potato slices on both sides until golden and slightly crispy. Season lightly with salt and pepper.
Step 2: Prepare the Egg Mixture
In a bowl, beat the eggs. Add salt, pepper, sweet paprika (if using), grated carrots, finely chopped onions, garlic, fresh herbs, and flour. Mix well until combined.
Step 3: Add Fillings
Top the fried potatoes with shredded cooked chicken, sliced mushrooms, and any additional fillings you like.
Step 4: Pour the Egg Mixture
Carefully pour the egg mixture evenly over the potatoes and filling.
Step 5: Bake or Fry Until Set
Cover the pan and cook on low-medium heat until the eggs set, about 5–7 minutes. Alternatively, transfer to a preheated oven at 180°C (350°F) and bake for 10–15 minutes until golden and firm on top.
Step 6: Add Cheese & Garnish
Sprinkle mozzarella cheese over the top during the last few minutes of cooking so it melts beautifully. Top with sliced tomatoes and olives if desired.
