Onions & Eggs Dish – So Divine, You’ll Make It Every Week!

This incredibly simple yet delicious dish made by simply mixing onions and eggs creates something truly magical — soft, golden, and bursting with flavor. Inspired by my grandmother’s kitchen, this recipe uses just a few affordable ingredients to create a comforting and hearty meal that’s perfect for breakfast, lunch, or dinner. Best of all? It’s ready in just 10 minutes !

✅ Ingredients:

  • 4 eggs
  • Salt and black pepper (to taste)
  • Sweet paprika (to taste)
  • Italian herbs mix (optional)
  • 2 onions (finely chopped)
  • 2–3 potatoes (grated)
  • 2 chicken sausages (crumbled or sliced)
  • 6 mushrooms (sliced)
  • Fresh spring onions and dill (chopped)
  • 3 tablespoons flour
  • 150g cheese (mozzarella or any melting cheese)
  • Vegetable oil (for frying)

🥗 For the Fresh Salad:

  • Mixed salad greens
  • ⅔ cucumber (sliced)
  • 2 tomatoes (sliced)
  • 1 teaspoon French mustard
  • Pinch of onion flakes
  • 50g green peas
  • Olive oil
  • Salt and black pepper

👨‍🍳 Instructions:

Step 1: Prepare the Base Mixture
In a large bowl, crack and beat the eggs. Add salt, pepper, sweet paprika, and herbs. Stir well.

Step 2: Add Veggies & Flour
Add finely chopped onions, grated potatoes, crumbled sausages, mushrooms, and fresh herbs. Mix everything together until well combined. Add flour and stir again to help bind the mixture.

Step 3: Fry Until Golden
Heat vegetable oil in a skillet. Spoon portions of the mixture into the pan and press gently into flat patties. Cook on medium heat for about 4–5 minutes per side until golden brown and crispy.

Step 4: Add Cheese (Optional)
During the last minute of cooking, sprinkle cheese over the top so it melts slightly.

Step 5: Make the Side Salad
Toss mixed greens, cucumber, tomatoes, peas, mustard, onion flakes, olive oil, salt, and pepper. Serve alongside the egg patties.

Step 6: Serve & Enjoy
Serve warm for a satisfying, quick, and flavorful meal that everyone will love!
