3 Potatoes & 3 Eggs Recipe – My Village Grandma’s Dish That Everyone Will Love!

This hearty and flavorful dish made with just 3 potatoes and 3 eggs is a true village gem — passed down from my grandmother and now a beloved family favorite. It features a crispy golden crust, a soft and savory interior, and a creamy homemade sauce that ties everything together. Whether you’re cooking for breakfast, lunch, or dinner, this comforting meal will impress everyone at the table.

✅ Ingredients:

  • 3 eggs
  • Salt and black pepper (to taste)
  • Sweet paprika (to taste)
  • Italian herbs mix (optional)
  • 3 medium potatoes
  • 2 onions
  • 1 clove garlic (minced)
  • 4 tablespoons flour
  • 2 carrots (grated)
  • 250 g mushrooms
  • 150 g mozzarella cheese
  • Butter (for frying)
  • Vegetable oil

🥄 For the Creamy Sauce:

  • 4 tablespoons sour cream
  • Salt and black pepper (to taste)
  • ½ onion (finely chopped)
  • 1 clove garlic (minced)
  • Fresh dill (chopped)

👨‍🍳 Instructions:

Step 1: Prepare the Potato Mixture
Peel and grate the potatoes. Squeeze out excess water using a clean kitchen towel. In a large bowl, combine grated potatoes with finely chopped onions, garlic, salt, pepper, sweet paprika, herbs, and flour. Add eggs and stir well until fully combined.

Step 2: Cook the Mushroom Filling
In a pan, melt butter and sauté sliced mushrooms until softened. Season lightly and set aside.

Step 3: Layer the Dish
Heat vegetable oil and a bit of butter in a large skillet. Spoon half the potato mixture into the pan and flatten into an even layer. Top with sautéed mushrooms and sprinkle mozzarella over it. Cover with the remaining potato mixture.

Step 4: Fry Until Golden
Cook on medium heat for about 5–6 minutes per side until golden and crispy.

Step 5: Make the Creamy Sauce
While the dish cooks, prepare the sauce by mixing sour cream, salt, pepper, garlic, chopped onion, and dill. Stir well and chill until serving.

Step 6: Serve & Enjoy
Slice the potato cake into portions, drizzle with the creamy sauce, and enjoy warm!

📝 Tips:

  • You can bake this instead of frying for a healthier version.
  • Substitute mozzarella with feta or cheddar if preferred.
  • Leftovers store well in the fridge and reheat beautifully in a skillet or oven.
  • Add a splash of milk or cream to the sauce for extra richness.
