This Mixed Grill Platter is a carnivore’s dream, featuring juicy chicken kebabsspiced lamb koftasucculent beef skewers, and grilled halloumi, served with smoky grilled veggies, garlic sauce, and warm flatbreads. Perfect for BBQs, parties, or a lavish family feast!

Ingredients (Serves 4-6):

For the Chicken Kebabs:

  • 1 lb (450g) boneless chicken thighs, cubed
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt & pepper

For the Lamb Kofta:

  • 1 lb (450g) ground lamb
  • 1 small onion, grated
  • 2 tbsp parsley, chopped
  • 1 tsp ground coriander
  • ½ tsp cinnamon
  • ½ tsp chili flakes

For the Beef Skewers:

  • 1 lb (450g) sirloin steak, cubed
  • 2 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp honey
  • 2 garlic cloves, minced

For the Platter:

  • 1 red onion, quartered
  • 1 bell pepper, sliced
  • 8 oz (225g) halloumi, sliced
  • Flatbreads (for serving)
  • Garlic sauce & tzatziki
  • Lemon wedges & fresh herbs

Instructions:

1️⃣ Marinate the Meats:

  1. Chicken: Mix with olive oil, lemon juice, and spices. Marinate 2+ hours.
  2. Lamb: Combine all kofta ingredients, shape onto skewers. Chill 30 mins.
  3. Beef: Whisk marinade ingredients, coat steak cubes, and marinate 1 hour.

2️⃣ Grill Everything:

  1. Preheat grill to medium-high.
  2. Thread chicken and beef onto skewers (if using wooden, soak first).
  3. Grill meats for 3-4 mins per side until charred and cooked through.
  4. Grill halloumi and veggies for 2-3 mins per side.

3️⃣ Assemble the Platter:

  1. Arrange meats, halloumi, and veggies on a large platter.
  2. Serve with flatbreads, sauces, lemon wedges, and herbs.
