Herb-Crusted Lamb Chops Platter – Elegant & Juicy!

This Lamb Chops Platter features tender, rosemary-garlic crusted chops served with roasted vegetables and mint yogurt sauce. Perfectly seared and medium-rare, it’s a stunning yet simple dish for dinner parties or date nights!

Ingredients (Serves 2-3):

For the Lamb Chops:

  • 8-10 lamb loin chops (1.5-inch thick)
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp lemon zest

For the Platter:

  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 red onion, wedged
  • ½ cup feta cheese, crumbled
  • ¼ cup Kalamata olives
  • Fresh mint leaves

For the Mint Yogurt Sauce:

  • ½ cup Greek yogurt
  • 2 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • 1 garlic clove, grated
  • Salt to taste

Instructions:

1️⃣ Marinate Lamb:

  1. Mix olive oil, garlic, rosemary, thyme, salt, pepper, and lemon zest.
  2. Coat chops evenly and marinate for 30 mins (or up to 4 hours).

2️⃣ Roast Vegetables:

  1. Toss tomatoes, zucchini, and onion with 1 tbsp oil, salt, and pepper.
  2. Roast at 400°F (200°C) for 15-20 mins until charred.

3️⃣ Sear Lamb:

  1. Heat a cast-iron skillet over high heat.
  2. Sear chops for 2-3 mins per side for medium-rare (145°F internal temp).

4️⃣ Assemble Platter:

  1. Spread roasted veggies on a platter. Arrange lamb chops on top.
  2. Scatter feta, olives, and mint leaves.
  3. Drizzle with mint yogurt sauce.
