This Honey Ginger Lemon Chicken is a vibrant, flavor-packed dish with tender pan-seared chicken glazed in a sweet-tangy sauce. Ingredients (Serves 4):

For the Chicken:

  • 1.5 lbs (700g) boneless, skinless chicken thighs or breasts
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

For the Honey Ginger Lemon Sauce:

  • ¼ cup honey
  • 3 tbsp soy sauce (low-sodium if preferred)
  • 2 tbsp fresh lemon juice (plus zest of 1 lemon)
  • 1 tbsp grated ginger
  • 3 garlic cloves, minced
  • ½ tsp red pepper flakes (optional)
  • 1 tbsp water + 1 tsp cornstarch (for thickening)

For Garnish/Sides:

  • Lemon slices
  • Fresh cilantro or parsley
  • Sesame seeds
  • Steamed jasmine rice or broccoli

Instructions:

1️⃣ Prep & Cook Chicken:

  1. Season chicken with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden and cooked through (165°F internal temp). Remove and set aside.

2️⃣ Make the Sauce:

  1. In the same skillet, reduce heat to medium. Add garlic, ginger, and red pepper flakes; sauté for 30 seconds until fragrant.
  2. Whisk in honey, soy sauce, lemon juice, zest, and cornstarch slurry. Simmer for 2-3 minutes until glossy and slightly thickened.

  1. Return chicken to the skillet, coating it evenly with the sauce. Cook for 1-2 more minutes.
