This Honey Soy Chicken is an irresistible balance of sweet and savory, with tender, juicy chicken coated in a glossy honey-soy glaze. Ready in just 30 minutes, it’s perfect for weeknight dinners or meal prep! Serve with steamed rice and veggies for a complete meal.

Ingredients (Serves 4):

For the Chicken:

  • 1.5 lbs (700g) boneless, skinless chicken thighs (or breasts)
  • 2 tbsp cornstarch
  • 1 tbsp oil (vegetable or sesame)
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame seeds (optional)

For the Honey Soy Sauce:

  • ¼ cup honey
  • ¼ cup soy sauce (low-sodium if preferred)
  • 2 tbsp water
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp rice vinegar
  • ½ tsp red pepper flakes (optional, for heat)

Instructions:

1️⃣ Prep the Chicken:

  1. Cut chicken into bite-sized pieces.
  2. Toss with cornstarch until evenly coated (this helps crisp the chicken and thicken the sauce).

2️⃣ Cook the Chicken:

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add chicken in a single layer and cook for 5-6 minutes, turning occasionally, until golden and cooked through. Remove and set aside.

3️⃣ Make the Sauce:

  1. In the same pan, reduce heat to medium.
  2. Add garlic and ginger, sauté for 30 seconds until fragrant.
  3. Pour in honey, soy sauce, water, rice vinegar, and red pepper flakes. Stir well and simmer for 2-3 minutes until slightly thickened.
