Juicy Roast Beef with Garlic-Herb Crust

This Perfect Roast Beef features a tender, medium-rare center with a crispy garlic-herb crust. Slow-roasted to perfection, it’s an impressive yet simple main dish for Sunday dinners or special occasions. Serve with roasted veggies and gravy for a complete meal!

Ingredients (Serves 6-8):

Main:

  • 3-4 lb (1.5kg) beef ribeye or sirloin roast
  • 2 tbsp olive oil
  • 1 tbsp coarse sea salt
  • 1 tbsp black pepper

Garlic-Herb Crust:

  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp Dijon mustard
  • 2 tbsp softened butter

For Gravy (Optional):

  • Pan drippings
  • 2 tbsp flour
  • 1 cup beef stock
  • 1 tsp Worcestershire sauce

Instructions:

1️⃣ Prep the Roast (1 hour before cooking):

  • Pat beef dry with paper towels
  • Rub with olive oil, salt, and pepper
  • Let sit at room temperature

2️⃣ Make Herb Crust:

  • Mix garlic, herbs, mustard, and butter
  • Spread evenly over roast

3️⃣ Roast:

  • Preheat oven to 450°F (230°C)
  • Place roast on rack in roasting pan
  • Sear for 15 minutes
  • Reduce heat to 325°F (160°C)
  • Roast 15 mins/lb for medium-rare (120°F internal temp)
  • Rest 30 minutes before slicing

4️⃣ Make Gravy:

  • Skim fat from drippings
  • Whisk in flour, then stock
  • Simmer until thickened
  • Add Worcestershire sauce
