Authentic Chicken Shawarma (Middle Eastern Street Food)

Recreate the juicy, spiced perfection of Middle Eastern street food with this homemade shawarma—marinated chicken thighs roasted to caramelized glory, wrapped in warm pita with garlic sauce and pickles. A flavor explosion in every bite!

Ingredients

For the Chicken:

  • 2 lbs boneless chicken thighs
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 6 garlic cloves, minced
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ½ tsp cayenne
  • 1 tbsp salt

For Serving:

  • 4 pita breads
  • 1 cup garlic toum (or tahini sauce)
  • Pickles & sliced tomatoes
  • Fresh parsley

Optional:

  • French fries (for Lebanese-style)
  • Sumac onions (thinly sliced onions tossed with sumac)

Instructions

1️⃣ Marinate Chicken:

  • Mix all marinade ingredients. Coat chicken thoroughly. Refrigerate 4-24 hours.

2️⃣ Roast:

  • Preheat oven to 425°F (220°C).
  • Stack chicken vertically on a skewer or bake flat on a tray for 40-45 mins until charred.

3️⃣ Slice & Serve:

  • Shave off crispy edges. Stuff pitas with chicken, toum, pickles, and veggies.
