Perfect Pan-Seared Salmon with Lemon-Dill Cream Sauce

Ingredients

For the Salmon:

  • 2 salmon fillets (6 oz each, skin-on)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

For the Sauce:

  • ¼ cup crème fraîche (or heavy cream)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh dill, chopped
  • 1 tsp capers (optional)

To Serve:

  • Asparagus or roasted potatoes
  • Lemon wedges

Instructions

1️⃣ Prep Salmon:

  • Pat fillets dry. Season skin with salt and pepper.

2️⃣ Sear:

  • Heat oil in a non-stick skillet over medium-high.
  • Place salmon skin-side down. Press gently for 30 sec to prevent curling.
  • Cook 4-5 mins until skin is crispy. Flip, add butter, and cook 2-3 mins more.

3️⃣ Make Sauce:

  • Remove salmon. Reduce heat to low.
  • Stir in crème fraîche, lemon juice/zest, dill, and capers. Warm through (don’t boil).

4️⃣ Serve:

  • Drizzle sauce over salmon. Garnish with extra dill.
