Classic Steak Frites with Garlic-Herb Butter (Bistro-Style Perfection)

Master the ultimate French bistro dish—juicy pan-seared ribeye with crispy golden fries and melting garlic-herb butter. A timeless combo of elegance and comfort, ready in 40 minutes!

Ingredients

For the Steak:

  • 2 ribeye steaks (1.5″ thick, ~12 oz each)
  • 2 tbsp high-smoke-point oil (avocado or grapeseed)
  • 1 tbsp kosher salt
  • 1 tsp black pepper

For the Garlic-Herb Butter:

  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp parsley, chopped
  • ½ tsp thyme leaves
  • ½ tsp lemon zest

For the Fries:

  • 2 large russet potatoes, cut into ¼” sticks
  • 4 cups peanut oil (for frying)
  • Salt

Instructions

1️⃣ Prep Fries:

  • Soak potato sticks in cold water for 30 mins. Pat dry.
  • Fry at 300°F (150°C) for 5 mins (blanching). Drain. Increase oil to 375°F (190°C), fry again for 3-4 mins until golden. Salt immediately.

2️⃣ Cook Steak:

  • Pat steaks dry. Season generously with salt and pepper.
  • Heat oil in cast-iron skillet over high heat until smoking.
  • Sear steaks 3-4 mins per side for medium-rare (130°F). Add 1 tbsp butter during last minute, baste.

3️⃣ Make Compound Butter:

  • Mix softened butter with garlic, herbs, and lemon zest.

4️⃣ Serve:

  • Top steaks with butter. Serve with fries and a green salad.
