Garlic-Herb Crusted Pork Tenderloin with Apple Cider Glaze

Ingredients

For the Pork:

  • 1.5 lb pork tenderloin (trimmed)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp salt
  • ½ tsp black pepper

For the Glaze:

  • 1 cup apple cider
  • 2 tbsp maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp butter

Optional Sides:

  • Roasted Brussels sprouts
  • Mashed sweet potatoes

Instructions

1️⃣ Prep Pork:

  • Preheat oven to 400°F (200°C). Pat pork dry.
  • Mix oil, garlic, herbs, salt, and pepper. Rub all over pork.

2️⃣ Sear & Roast:

  • Heat an oven-safe skillet over medium-high. Sear pork on all sides (~2 mins per side).
  • Transfer skillet to oven. Roast 18-20 mins until internal temp reaches 145°F (63°C).

3️⃣ Make Glaze:

  • Simmer cider, syrup, and mustard in a saucepan until reduced by half (~8 mins). Stir in butter.

4️⃣ Serve:

  • Let pork rest 5 mins. Slice and drizzle with glaze.
