Ultimate Mixed Grill Platter (Middle Eastern Kebab Feast)

Fire up the grill for this showstopping mixed kebab platter—succulent lamb kofta, spicy chicken shish, and juicy beef kebabs served with smoky grilled veggies, flatbreads, and garlic sauce. A carnivore’s dream perfect for festive gatherings!

Ingredients

For the Lamb Kofta Kebabs:

  • 1 lb ground lamb
  • ½ onion, grated
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • ¼ cup parsley, chopped
  • Salt & pepper

For the Chicken Shish Kebabs:

  • 1 lb chicken thighs, cubed
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp cayenne (optional)
  • 1 lemon (juice + zest)

For the Beef Kebabs:

  • 1 lb sirloin, cubed
  • 2 tbsp pomegranate molasses
  • 1 tbsp sumac
  • 1 tsp garlic powder

Grilled Veggies & Sides:

  • Bell peppers, onions, zucchini (sliced)
  • Flatbreads
  • Garlic toum (Lebanese sauce)
  • Lemon wedges

Instructions

1️⃣ Marinate Meats (2h+):

  • Mix lamb kofta ingredients; shape onto skewers.
  • Toss chicken with oil, paprika, cayenne, and lemon. Thread onto skewers.
  • Coat beef with molasses, sumac, and garlic powder. Skewer.

2️⃣ Grill:

  • Cook kebabs over medium-high heat, turning occasionally:
    • Lamb: 8-10 mins
    • Chicken: 10-12 mins
    • Beef: 6-8 mins (medium-rare)
  • Grill veggies until charred (~5 mins).

3️⃣ Serve:

  • Arrange on platter with flatbreads, toum, and lemon.
