Ingredients
For the Coffee Dip:
- 1½ cups strong espresso (cooled)
- 2 tbsp coffee liqueur (optional)
- 1 tbsp sugar
For the Cream:
- 16 oz mascarpone cheese
- 3 egg yolks (or ½ cup pasteurized yolks)
- ½ cup granulated sugar
- 1 cup heavy cream
- 1 tsp vanilla extract
Assembly:
- 24 ladyfingers (savoiardi)
- Cocoa powder for dusting
- Dark chocolate shavings (optional)
Instructions
1️⃣ Prep Coffee Mixture:
- Mix espresso, liqueur (if using), and sugar. Set aside.
2️⃣ Make Mascarpone Cream:
- Beat yolks and sugar over a double boiler until pale/thick (~5 mins). Cool.
- Whip heavy cream to stiff peaks. Fold into mascarpone with yolk mixture and vanilla.
3️⃣ Assemble:
- Quickly dip ladyfingers in coffee (1 sec per side). Layer in a 9″ dish.
- Spread half the cream over ladyfingers. Repeat layers.
- Chill 6+ hours (best overnight).
