Ingredients
For the Veal Steak:
- 2 veal loin/rib chops (1.5″ thick)
- 2 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, smashed
- 2 sprigs fresh rosemary
- Salt & black pepper
For the Asparagus:
- 1 bunch asparagus (woody ends trimmed)
- 1 tbsp butter
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chopped parsley
Instructions
1️⃣ Prep & Sear Veal:
- Pat steaks dry, season generously with salt and pepper.
- Heat oil in a cast-iron skillet over medium-high. Sear steaks 3-4 mins per side for medium-rare.
- Add butter, garlic, and rosemary. Baste steaks 1 minute. Rest 5 mins.
2️⃣ Cook Asparagus:
- In the same pan, sauté asparagus 3-4 mins until bright green.
