Ingredients

For the Veal Steak:

  • 2 veal loin/rib chops (1.5″ thick)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, smashed
  • 2 sprigs fresh rosemary
  • Salt & black pepper

For the Asparagus:

  • 1 bunch asparagus (woody ends trimmed)
  • 1 tbsp butter
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped parsley

Instructions

1️⃣ Prep & Sear Veal:

  • Pat steaks dry, season generously with salt and pepper.
  • Heat oil in a cast-iron skillet over medium-high. Sear steaks 3-4 mins per side for medium-rare.
  • Add butter, garlic, and rosemary. Baste steaks 1 minute. Rest 5 mins.

2️⃣ Cook Asparagus:

  • In the same pan, sauté asparagus 3-4 mins until bright green.
  • Off heat, toss with butter, lemon juice/zest, and parsley.

3️⃣ Serve:

  • Plate veal over asparagus. Drizzle with pan juices.
