Fluffy Schaumomelette (Austrian Sweet Soufflé Omelette Pancakes)

Ingredients

  • 3 large eggs (separated)
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • Pinch of salt
  • 1 tbsp butter
  • To serve: Powdered sugar, fruit compote, or maple syrup

Instructions

1️⃣ Whip Egg Whites:

  • Beat egg whites with salt until stiff peaks form. Gradually add sugar until glossy.

2️⃣ Prepare Batter:

  • Whisk yolks with vanilla and flour. Gently fold into whites.

3️⃣ Cook:

  • Melt butter in a non-stick pan over medium-low. Pour batter, smooth the top.
  • Cover and cook for 4-5 mins until golden underneath. Flip carefully, cook 2-3 mins more.
