Ingredients

For the Shrimp:

  • 1 lb large shrimp (peeled, deveined)
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 red chili, sliced (optional)
  • 2 tbsp Shaoxing wine (or dry sherry)
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp sesame oil

For the Crispy Noodles:

  • 200g fresh egg noodles
  • 2 cups vegetable oil (for frying)

Garnish:

  • Scallions, sliced
  • Cilantro leaves
  • Toasted sesame seeds

Instructions

1️⃣ Prep Noodles:

  • Cook noodles 1 minute less than package instructions. Rinse, drain, and pat dry.
  • Heat oil to 375°F (190°C). Fry noodles in small nests until golden (~2 mins per side). Drain on paper towels.

2️⃣ Cook Shrimp:

  • Melt butter in a wok. Sauté garlic, ginger, and chili for 30 seconds until fragrant.
  • Add shrimp, stir-fry for 2 minutes until pink.
  • Deglaze with Shaoxing wine, then add soy sauce, honey, and sesame oil. Toss 1 minute.

  • Place crispy noodles on a plate. Top with shrimp and sauce. Garnish with scallions, cilantro, and sesame seeds.
