Classic Vegan Red Velvet Cake (Creamy & Indulgent)

Ingredients

For the Cake:

  • 2½ cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp cocoa powder
  • ½ tsp salt
  • 1½ cups unsweetened almond milk
  • ⅔ cup vegetable oil
  • 2 tbsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 tbsp vegan red food coloring

For the Frosting:

  • ½ cup vegan butter, softened
  • 8 oz vegan cream cheese (cold)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

For Decoration:

  • Fresh raspberries or strawberries
  • Vegan white chocolate shavings

Instructions

1️⃣ Prep:

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round pans.

2️⃣ Make the Cake:

  • Whisk dry ingredients (flour, sugar, baking soda, cocoa, salt) in a bowl.
  • In another bowl, mix wet ingredients (milk, oil, vinegar, vanilla, food coloring).
  • Combine wet and dry mixtures until smooth (don’t overmix).
  • Divide batter evenly between pans. Bake for 25-30 minutes. Cool completely.

3️⃣ Make the Frosting:

  • Beat vegan butter and cream cheese until fluffy.
  • Gradually add powdered sugar and vanilla. Whip until smooth.

4️⃣ Assemble:

  • Place one cake layer on a plate. Spread with frosting.
  • Top with second layer. Frost entire cake and decorate with berries.
