Calling all chocolate lovers! This Chocoholic’s Berries Cake combines rich, fudgy chocolate layers with bursts of fresh berries and velvety vegan ganache. Perfect for birthdays, anniversaries, or when you need a show-stopping dessert that happens to be dairy-free!

Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1¾ cups coconut sugar
- ¾ cup cocoa powder
- 2 tsp baking soda
- 1 tsp salt
- 1½ cups cold brewed coffee (or water)
- ½ cup vegetable oil
- 2 tbsp apple cider vinegar
- 2 tsp vanilla extract
For the Filling:
- 1½ cups mixed berries (strawberries, raspberries, blackberries)
- 2 tbsp chia seeds + 6 tbsp water (chia “jam”)
For the Chocolate Ganache:
- 1 cup dairy-free chocolate chips
- ½ cup full-fat coconut milk
For Decoration:
- Fresh berries
- Edible flowers (optional)
- Cocoa powder for dusting
Instructions:
1️⃣ Prep:
- Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
2️⃣ Make the Cake:
- Whisk dry ingredients in a large bowl.
- Add wet ingredients and mix until just combined (batter will be thin).
- Divide between pans and bake for 30-35 minutes. Cool completely.
3️⃣ Prepare Fillings:
- Make chia jam by mixing chia seeds with water, let thicken for 15 mins.
- Toss berries with 1 tbsp sugar (optional).
4️⃣ Make Ganache:
- Heat coconut milk until steaming, pour over chocolate chips, let sit 2 mins, then stir until smooth. Cool to spreadable consistency.
5️⃣ Assemble:
- Place first cake layer, spread with chia jam, then berries.
- Top with second layer, frost with ganache, and decorate with fresh berries.
