Classic Quiche Lorraine (French Savory Tart)

Indulge in the rich, creamy perfection of Quiche Lorraine—a French classic featuring a buttery crust filled with smoky bacon, caramelized onions, and a velvety egg custard. Perfect for brunch, lunch, or a light dinner, this elegant dish is sure to impress!

Ingredients:

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed
  • 3-4 tbsp ice water

For the Filling:

  • 6 oz bacon, diced
  • 1 small onion, thinly sliced
  • 3 large eggs
  • 1 ¼ cups heavy cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp ground nutmeg
  • 1 cup shredded Gruyère cheese (or Swiss cheese)

Instructions:

1️⃣ Make the Crust:

  • In a bowl, mix flour and salt. Cut in butter until crumbly.
  • Gradually add ice water, 1 tbsp at a time, until dough forms.
  • Roll into a disk, wrap in plastic, and chill for 30 minutes.

2️⃣ Prebake the Crust:

  • Roll out dough and fit into a 9-inch tart pan. Prick with a fork.
  • Line with parchment and pie weights (or dried beans).
  • Bake at 375°F (190°C) for 15 minutes. Remove weights and bake 5 more minutes.

3️⃣ Cook Bacon & Onions:

  • In a skillet, cook bacon until crispy. Remove and drain.
  • Sauté onions in bacon fat until golden (5 mins).

4️⃣ Prepare Custard:

  • Whisk eggs, cream, salt, pepper, and nutmeg in a bowl.

5️⃣ Assemble & Bake:

  • Sprinkle bacon, onions, and cheese into the crust. Pour custard over.
  • Bake at 375°F (190°C) for 30-35 minutes until set and golden.
  • Let cool 10 minutes before slicing.
