Ingredients (makes 6 skewers):
- 500g (1 lb) chicken breast or thighs, cut into chunks
- 1 red bell pepper, cut into squares
- 1 yellow bell pepper, cut into squares
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt & pepper to taste
- Wooden or metal skewers (if wooden, soak in water for 30 mins)
Instructions:
- In a bowl, mix olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper.
- Add chicken pieces and toss to coat. Marinate for at least 30 minutes (or overnight for max flavor).
- Thread chicken, bell peppers, and onion alternately onto skewers.
- Preheat grill to medium-high heat. Lightly oil the grates.
- Grill skewers for 10β12 minutes, turning occasionally, until chicken is fully cooked and has nice char marks.
- Serve hot with lemon wedges, fresh herbs, or a side of tzatziki, rice, or grilled flatbread.
