Grilled Chicken Skewers with Veggies** are smoky, juicy, and bursting with bold flavor. Ingredients (makes 6 skewers):

  • 500g (1 lb) chicken breast or thighs, cut into chunks
  • 1 red bell pepper, cut into squares
  • 1 yellow bell pepper, cut into squares
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • Wooden or metal skewers (if wooden, soak in water for 30 mins)

Instructions:

  1. In a bowl, mix olive oil, garlic, lemon juice, paprika, oregano, salt, and pepper.
  2. Add chicken pieces and toss to coat. Marinate for at least 30 minutes (or overnight for max flavor).
  3. Thread chicken, bell peppers, and onion alternately onto skewers.
  4. Preheat grill to medium-high heat. Lightly oil the grates.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and has nice char marks.
  6. Serve hot with lemon wedges, fresh herbs, or a side of tzatziki, rice, or grilled flatbread.
