Ingredients (Serves 4-6):
For the Chicken Kebabs:
- 1 lb (450g) boneless chicken thighs, cubed
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- Salt & pepper
For the Lamb Kofta:
- 1 lb (450g) ground lamb
- 1 small onion, grated
- 2 tbsp parsley, chopped
- 1 tsp ground coriander
- ½ tsp cinnamon
- ½ tsp chili flakes
For the Beef Skewers:
- 1 lb (450g) sirloin steak, cubed
- 2 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp honey
- 2 garlic cloves, minced
For the Platter:
- 1 red onion, quartered
- 1 bell pepper, sliced
- 8 oz (225g) halloumi, sliced
- Flatbreads (for serving)
- Garlic sauce & tzatziki
- Lemon wedges & fresh herbs
Instructions:
1️⃣ Marinate the Meats:
- Chicken: Mix with olive oil, lemon juice, and spices. Marinate 2+ hours.
- Lamb: Combine all kofta ingredients, shape onto skewers. Chill 30 mins.
- Beef: Whisk marinade ingredients, coat steak cubes, and marinate 1 hour.
2️⃣ Grill Everything:
- Preheat grill to medium-high.
- Thread chicken and beef onto skewers (if using wooden, soak first).
- Grill meats for 3-4 mins per side until charred and cooked through.
- Grill halloumi and veggies for 2-3 mins per side.
