Crispy Kibbeh Platter – A Middle Eastern Feast!

This Kibbeh Platter features golden, crispy fried kibbeh (spiced meat-filled bulgur shells) arranged with fresh herbs, pickles, and creamy tahini sauce. A stunning centerpiece for gatherings, showcasing the best of Levantine cuisine!

Ingredients (Serves 4-6):

For the Kibbeh Shells:

  • 1½ cups fine bulgur (soaked 30 mins, drained)
  • 1 cup all-purpose flour
  • 1 small onion, grated
  • 1 tsp ground cumin
  • 1 tsp seven spices (or allspice)
  • ½ tsp salt
  • Ice water (as needed)

For the Filling:

  • 1 lb (450g) ground lamb or beef
  • 1 onion, finely chopped
  • 2 tbsp pine nuts (toasted)
  • 1 tsp baharat spice
  • ½ tsp cinnamon
  • Salt & pepper to taste

For the Platter:

  • Tahini sauce
  • Fresh mint & parsley
  • Pickled turnips & cucumbers
  • Lemon wedges
  • Pomegranate seeds

Instructions:

1️⃣ Prepare Filling:

  1. Brown meat in a pan with onion and spices. Stir in pine nuts. Cool completely.

2️⃣ Make Kibbeh Dough:

  1. Blend bulgur, flour, onion, and spices in a food processor.
  2. Add ice water 1 tbsp at a time until dough forms.

3️⃣ Shape & Fry:

  1. Wet hands, take golf ball-sized dough, hollow into a cup.
  2. Fill with 1 tsp meat mixture, seal into oval shapes.
  3. Deep-fry at 350°F (175°C) for 3-4 mins until golden.

4️⃣ Assemble Platter:

  1. Arrange kibbeh on a bed of herbs.
  2. Add pickles, lemon, and drizzle with tahini.

Pro Tip: Keep dough covered with damp cloth to prevent drying!
