Crispy Fried Tapioca (Brazilian-Style Mandioca Frita with Spicy Dip)

Ingredients

For the Tapioca:

  • 1 lb fresh cassava/yuca root (peeled, cut into thick fries)
  • 2 cups vegetable oil (for frying)
  • 1 tsp salt

For the Dipping Sauce:

  • ½ cup mayonnaise
  • 1 lime (juiced)
  • 1 garlic clove, minced
  • 1 tsp chili flakes
  • ¼ tsp smoked paprika

Optional Garnish:

  • Chopped parsley
  • Flaky sea salt

Instructions

1️⃣ Prep Cassava:

  • Boil cassava in salted water for 15 mins until slightly tender. Drain and pat dry.

2️⃣ Fry to Perfection:

  • Heat oil to 350°F (175°C). Fry cassava in batches for 4-5 mins until golden and crispy. Drain on paper towels.

3️⃣ Make Sauce:

  • Mix mayo, lime juice, garlic, chili, and paprika.
